Crispy fried tofu is one of the three recipes proposed by chef Francesco Basco during the first show cooking of the "N&B in Cucina" project.
Ingredients :
- 300g tofu
- 300g flour
- 200ml water
- Dried rosemary
- Bread crumbs
- Peanut oil
Method
- In a boule add water and sifted flour and mix vigorously until a smooth and homogeneous batter is obtained. Let rest for 20 minutes.
- Prepare the tofu slices and pat them dry with paper towels to dry all the water they release
- In another bowl, mix breadcrumbs and rosemary, add a pinch of salt.
- Dip the tofu slices in the batter and then in the breadcrumbs making it adhere well by pressing with your fingers.
- Heat a saucepan full of oil and bring it to a temperature of 175°C. Dip in a few slices of tofu at a time and fry until golden brown.
- Dry the tofu slices on absorbent paper and serve them accompanied by your favorite sauce! We recommend vegan mayonnaise or B&B sauce.
