Seitan beer and apple

Seitan with beer and apple is one of the three recipes proposed by chef Francesco Basco during the show cooking of the "N&B in Cucina" project dedicated to Seitan.

Ingredients :

  • 1 pack of Seitan
  • Apples
  • Cherry tomatoes
  • Mince for sauté
  • 1 clove of garlic
  • 1 sprig of marjoram
  • 2 tablespoons of oil
  • Lemon peel
  • Flour to taste
  • 2 glasses of beer
  • Vegetable broth
  • Parsley
  • Salt and Pepper To Taste


  1. First put the stew in a bowl and marinate in the beer for an hour.
  2. After the hour, drain the seitan stew and flour it.
  3. Prepare the sautéed carrot, celery and onion with extra virgin olive oil. When the fried mixture is well browned, add the stew and let it brown evenly.
  4. Add the chopped lemon peel, chopped marjoram and beer; season with salt and pepper. Cover the saucepan and let it cook for 10 minutes on a low flame.
  5. Once the time has passed, add the peeled and diced tomatoes, the peeled and diced apple. Adjust salt if necessary.
  6. Leave to cook for another 15 minutes, wetting from time to time with the broth. Serve hot to the table.
