Thanks to its soft flavour and high digestibility, seitan is a good plant based substitute for meat that can be used in several traditional recipes, with the advantage that it requires a shorter cooking time.
The protein content of seitan can be increased in the preparation phase by adding, for example, soy sauce. Furthermore, seitan is a low-fat and cholesterol-free food, suitable for low calorie diets.
