Tempeh (soy)


Tempeh is a fermented food made from hulled yellow soybeans. The fermentation process (thanks to the Rhizopus Oligosporus mushroom) preserves all the nutritional qualities of soybeans. Its texture is chunky and it has a rich, intense flavor. Tempeh is widely used in vegetarian and vegan diets.
